They are just so quick and easy to make for such a great result.
It is very hard to eat just one…..

- Chocolate Macadamia Brownies
- 2 heaped teaspoons of instant coffee dissolved in 1/3 cup boiling water
- 180gm butter, chopped
- 250gm dark cooking chocolate, chopped
- 1 ½ cups plain flour, sifted
- ½ cup dark cocoa powder, sifted
- 1 ½ cups caster sugar
- 1 cup unsalted macadamia nuts, roughly chopped
- 3 eggs, lightly beaten
Pre-heat oven to 1700 C. Line a rectangular tin with baking paper-with overhang at the long sides to allow removing the brownies easy. The tin I use is 32 X 22 cms.
Place the coffee mix, butter and chocolate in a medium pan - stir over a low heat until butter and chocolate are melted and the mixture is smooth-remove from heat and set aside.
Sift the flour and cocoa into a large bowl. Add the sugar and nuts, stir to combine. Make a well in the centre, add the chocolate mixture and the eggs and stir until well combined.
Spoon the mixture into the prepared tin- smooth the top with the back of a spoon until quite even. Bake for 30-35 minutes. Brownies are a fudgy texture – don’t overcook.
Remove from oven onto a wire rack to cool. Remove from the tin when completely cold and cut into squares. Enjoy !!!
Variation- You could also try different nuts – works well with pecans and walnuts as well

Have you seen the new “Australian Baby Guide” out on the shelves?
It’s the new name for The Nappy Bag Book, and is now on sale through book retailers nationally including Target, Big W, Borders, Collins,
A & R, National Pharmacies and independent bookstores.
It probably would have grabbed your attention as it did for one of our customers who phoned us from the checkout at Big W to say they had seen it, and wow what a beautiful pic on the cover…it must be our work!
Yes, a Lifeworks Photography image was selected for the front Cover. One of our gorgeous baby stars, Joshua.
We also have a “guitar hero” Wes on page514, and Julie’s very own cute as a button, Amelia the “Party girl” cake eater on pg556.

On Easter Saturday Susie Latham from Lifeworks Photography was married to her beau Wayne Roberts.
A gorgeous bride, a handsome groom, beautiful sunshine, a picturesque setting…..and where are the guests…..oops, a wrong address, a small delay of the ceremony but still we all managed to get there in time to see a radiant and very beautiful bride walk up the leafy garden aisle.
A fabulously gourmet reception followed at Glen Harrow Guest House, Belgrave.
Susie and Wayne are currently soaking up the tropical sun, but I am sure she cannot wait to be back at Lifeworks next week!

Melissa’s Boiled Chocolate Cake - “Easter Muffin Recipe”
- 1 cup water
- 1½ cups caster sugar
- 125gms butter
- 2 tbsp cocoa (good quality produces a nicer cake)
- 1/2 tsp baking soda
- 1 ½ cups SR flour - sifted
- 2 eggs
In a medium saucepan – water, butter, sugar, cocoa and baking soda- stir constantly over medium heat till it comes to a gentle boil. Remove from heat and allow to cool to just warm (too hot and the eggs will cook in mix when added).
I am too impatient to wait for it to cool by itself and so I sit the saucepan in the kitchen sink filled with cold water to speed up the process.
When cool – with handheld electric beaters mix in the sifted flour till well combined – then beat in the eggs one at a time.
This mix can be made into a large cake in either a round or square tin lined with baking apper – cook at 170 degrees (160 degrees fan forced) for approx 40 minutes (depending on your oven) – check with a skewer and adjust cooking time accordingly.
I also use it to make cupcakes – Cup cakes are cooked for approx 13 minutes (check after this time-should spring to the touch) – only 2/3 fill the cupcake paper.
This is a moist almost fudgy cake that is just so easy to make. My mum always made this cake for all our birthdays and is a treasured family favourite. The best thing is that it can all be prepared in one saucepan which saves on washing up – what’s not to love!

On Saturday 4th April, Susie, one of the Lifeworks girls celebrated her Hens Night with a “Life Drawing Class” and Cocktails with her friends in Prahran. As you can see all the Lifeworks team had a great night and we greatly look forward to her Wedding on Easter Saturday….stay tuned.

On 1st April, Lisa (a big fan of music) attended a slideshow by World Famous Rock’n'Roll photographer “Tony Mott”.
It was a thoroughly enjoyable night full on inspiration, backstage stories and exciting location shoots.
All in all, a great night out. Tony’s book “Every picture tells a story” can be purchased through www.tonymott.com.

On Monday 9th of March, Lifeworks Julie Ewing attended a Gala event at the Park Hyatt Melbourne.
The event organised by The Australian Institute Of Professional Photography in conjunction with International Woman’s Day was to celebrate Legendary Female Australian Photographers and raise much needed funds to support patients their families and carers as they go through their cancer journey, proceeds going to the Olivia Newton-John Cancer and Wellness Centre Appeal.
Although I was not one of the 6 “legends” honoured, I was acknowledged as one of Australia’s celebrated award-winning female photographers and invited to provide 4 images for a collection especially curated for the evening.
The Park Hyatt Melbourne was a gorgeous location for this inaugural event and a great opportunity catch up with friends and colleges from all over Australia to celebrate a fabulous occasion whilst raising funds for a very worthy cause. Amongst items auctioned on the night, was an autographed limited addition Kylie Minogue book, which had the room a buzz.
